Do I have to create DNS Records for search.myopenfire.org and conference.myopenfire.org in order to allow XMPP Users from other Servers to use these Services? Or will a DNS SRV Record for xmpp just do the trick?

it should be enough.
You could test and confirm this after creating one.
Being paranoid you may need to create much more DNS SRV records, but that's up to you.
